Timmy’s Chimis is built on family, hard work, and food that feels like home. I grew up in Glendive, Montana, the fifth of seven kids, raised by parents who turned fifteen acres of hayfield into a campground with grit, vision, and no shortcuts. From them, I learned the value of showing up, working hard, and building something real.

No matter how long the day was, we always came together around the dinner table. At the center of many of those meals were my Mom’s home cooking. My favorite was tacos and her signature sauce — the kind of food that brought comfort, laughter, and connection. That recipe became more than a meal. It became a piece of who we are.

Years later, after moving to New Mexico, I found inspiration in the bold flavors of the Southwest — especially green chile. Timmy’s Chimis brings those worlds together: Montana roots, New Mexico fire, and a family recipe made to be shared. Together with the support of my wife, Timmy’s Chimis is born.

Every chimi, taco, and plate is crafted with heart — warm, comforting, and full of flavor. Timmy’s Chimis is my way of carrying forward what my family taught me: good food brings people together, and brighter days often start with a meal made with care.
